My Christmas

Hey, Happy New Year! Wish you all the best and a lot of sweet moments in this year. Now I will present you most of our Christmas recipes.

However, before I type the recipes I want to tell you more about my Christmas. As you know, I love Christmas and I am like 5- year old child, because I can’t wait to open my presents and every Christmas Eve I go to bed early (before 12 am.) because when I was child my parents told me that if I go to bed after midnight, Santa will not come, so it became a tradition 🙂 At Christmas morning I am always the first person who gets up, because I always get up around 6-7 o’clock. This year everything was the same : ). When I got up I tried to be quiet and I ran to the Christmas tree to find and open my gifts. Like every year Santa brought me the thing that I want 🙂 This year I wanted something that will help me when I want to make some nice decoration and it is really good place to store my things, because before that everything was everywhere 😀

Let’s continue with my story… when I opened my presents my mum got up and it means that she must find and open her presents, which make me happy too, because I love when people open theirs presents. However, Christmas is not only the time when we have lots of gifts, it’s also the time when we gather the whole family and have very good time together. I love these holidays. Yes, I have a lot of work in the kitchen, but I love the time which I spend there 🙂

InBulgariathere are some recipes which are indispensable part of our table, like cookies with honey, baklava (my mum make it every year), cookies with Turkish delight (I haven’t done that)  and some other.  We make also make some other desserts, they are always different, because we must have choice and things for everyone 🙂

Ok, I will give you some of recipes.

Cookies with honey

Products:

2 eggs

1 ½ cup sugar

1 cup oil

4tbsp honey

10g cinnamon

1tsp soda of bicarbonate

Flour (since it becomes soft dough)

Beat eggs with sugar, then add oil and honey. Mix together some flour (1 cup) with bicarbonate soda and cinnamon. Beat together flour and egg mixture. Then add flour since dough become soft and sticky. It mustn’t be too hard because and cookies will be too hard. Form little balls from the dough and put them to grease with baking sheet tins. Put peace of walnuts on every ball and bake in preheat oven to 180C until it become lightly golden. If you like you can make really small balls and then you can blind two cookies with jam or you can dip each cookie in melt chocolate.

3-chocolate cookies

Products:

225g semisweet chocolate, roughly chopped

80g tablespoons unsalted butter

75g all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

2 large eggs

100g brown sugar

1 teaspoon pure vanilla extract

100g white chocolate, chopped

100g milk chocolate, chopped

Preheat the oven to 180C. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring between each, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt.

In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks.

Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on baking sheets 10 minutes; transfer to a wire rack to cool completely.

Brownies cookies

Products:

110g all-purpose flour
pinch of salt
1/3 teaspoon baking powder
75g lightly salted butter, softened
85g sugar
1 egg
1 teaspoon vanilla extract
30g unsweetened cocoa

Preheat oven at 180C. Whisk dry flour, salt and baking powder in bowl and set aside. Mix butter, sugar, eggs, vanilla and cocoa in mixer. Gradually add flour mixture, and mix until smooth. Wrap in plastic and chill for at least one hour.

Roll out cookie dough on floured counter. Cut into desired shapes, brushing extra deposits of flour off the top.  Bake on a parchment-lined baking sheet for 8 to 11 minutes until the edges are firm and the centers are slightly soft and puffed. Then put nuts and candies until they are hot. Leave to cool and decorate with white chocolate.

I also make some culinary gifts- Truffles and Homemade Ferrero Rocher. I don’t have photos, sorry about that, but I will give you the recipe.

Chocolate Truffles

Products:

135ml double cream

20ml glucose

100g dark chocolate

100g cocoa

200g dark chocolate

Boil cream and glucose. Chop the chocolate and mix with boiled mixture. Leave to cool, then transfer to refrigerator for 24 hours. Form balls dip; them to the melt chocolate and sift with cocoa powder.

Homemade Ferrero Rocher

Products:

100 g hazelnut wafer biscuits, crushed
150 g toasted hazelnuts, finely chopped
200 g Nutella
150 g dark chocolate
4 1/2 Tbsp oil

Combine wafer biscuits, hazelnuts and Nutella in a bowl. Leave in a fridge for about half an hour and then shape into small balls. Again, leave in the fridge to harden.

Meanwhile, in a double boiler, melt chocolate with oil. Using a toothpick, dip each truffle into melted chocolate and leave on a plate. After you’re done with all the truffles, leave them in the fridge. I coated them only once, so I had a lot of leftover chocolate. Seemed more like the original with the bumpy texture, but if you wish, you can coat them as many times as you like.

Makes about 25 truffles.

And I want to finish with something which is typical for Bulgarian and Turkish cuisine- Baklava.

Products:

800g filo pastry

1kg walnuts

250g butter

1 ½ kg sugar

2l water

Grease the tin with butter. Put 2 length of the filo, brush with melted butter and sprinkle with chopped walnuts and put other 2 length of filo. Do the same since everything finish. Cut the baklava into triangles. Preheat the oven to 150C and bake it for 1h and 30 minutes. In this time you can make the syrup. Put the water and sugar. Leave it to boil for 20 minutes. Then flood the baklava with syrup and leave for one night.

Ho-Ho-Ho, how are you? Is there some Christmas mood already? If you are sad or depressed remind that after 10 days is Christmas Eve and when you see all lights and Christmas trees it will make you smile : ) I hope this recipe make you smile too.

I have never done something like that, but it always have first time. My family love these slices and said that they have the same taste like twix and it can be true because there is cookie in the bottom, caramel in the middle and chocolate on the top, it sounds delicious, right? You can try them for Christmas; they will be perfect candies for children and adults.

And this is the recipe:

Products (makes about 24)

For the base:

250g flour

75g caster sugar

175g unsalted butter

For the filling:

90g unsalted butter

90g brown sugar

2 x 397 cans sweetened condensed milk

For the topping:

90g plain, 90g milk and 50g white chocolate

Preheat the oven to 180C. Line and lightly grease a 33x 23cm Swiss roll tin (I don’t have that one and bake it in normal tin). Put the flour and caster sugar in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Work with your hands and form dough.

Put the dough into prepared tin and press it out with your hand to cover the base. Prick all over with a fork and bake for 20 minutes, until lightly brown. Leave to cool.

To make a filling, put the butter, sugar and condensed milk into a pan and heat gently, stirring, until the sugar has dissolved. Stirring constantly, bring to the boil. Reduce the heat and simmer the mixture very gently, stirring constantly, for about 5-10 minutes, or until it has thickened and has turned a caramel colour. Take care that the mixture does not burn on the base of the pan. Remove from the heat.

Pour the filling mixture over the cookie base, spread evenly, then leave to cool.

To make the topping, melt each type of chocolate. Spoon lines of the plain and milk chocolate over the set caramel filling. Add small spoonful of white chocolate. Use a skewer to form a marbled effect on the topping.

That’s all. Don’t make mistake to put this in refrigerator, I did that and after that I should wait an hour to warm up, because the chocolate was frozen.

Acorns

Hey, there are exactly 12 days until Christmas Eve and less than 6 days since I will see my sister (happy).This recipe is perfect for Christmas too, it is normal to cook only Christmas recipes, isn’t it?  These acorns became really cute and tasty, I am proud of myself : )

If I must tell the truth they take a little more time, because it takes time to form the acorn halves and then to stick them together. Never mind how long it takes the result is really amazing. My family love them and one of the reason that they like them so much is that this is one of the recipes from their childhood and from mine too, but I don’t like jam so this cookies has never been part of my childhood 😀

This is the products for about 25-30 acorns:

For the dough:
400 g flour (+/-)
2 eggs (medium size)
80 g cold butter
100 g caster sugar
1p. vanilla sugar
pinch of salt

Beat the eggs with vanilla sugar and salt. Mix the cold butter and sugar. Then sift the flour and add the egg and butter mixture. Make dough.

Form acorn’s half, you can use tea spoon or make them with hands.

Preheat the oven to 200C. Put the cookies in greased sheet and bake them until lightly golden.

Leave them to cool.

For the cream:

3 tbsp jam

1 tbsp finely ground nuts

Mix the products for the cream. Take one cookie, put a little cream and stick together. Then you can dunk them in melt chocolate and sprinkle with ground nuts (I used walnuts)

That’s all. They become really delicious : ) Surprise your family with some homemade cookies. Cookies are never excessive : )

Christmas Biscotti

Hey, It was one really good day- nice weather, nice people and Christmas magic feeling. My today’s recipe tells “Christmas”. The kitchen smelled so nice after that… mm… the taste is really awesome too.

There are wide varieties of ingredients which make these biscotti so delicious. It was my first time when I made biscotti and they became just the way they must be. They are easy to make and only baking time is a little long, preparation is fast. This is the recipe:

Products (makes 20-30)

Adapted from Sunshine’s Kitchen

2 eggs

100g caster sugar

70g brown sugar

1 tsp lemon rind

2 tbsp orange rind

300g plain flour

1 ½ tsp baking powder

Pinch of salt

60g dried cranberries, soaked in rum

60g dried pineapple, soaked in rum

40g almonds, baked

40g pistachios, baked

Put the eggs and sugar (both) into a bowl and beat well. Add the orange and lemon rind.

Sift the flour, salt and baking powder. Then mix the flour mixture with egg’s one. Beat until it become sticky dough.

Add the almonds, pistachios and dried fruits and mix well.

Preheat the oven to 180C. Grease the baking sheet.

Halve the mixture. Shape each half into a flat “sausage”. Bake for about 25-30 minutes. Remove the “sausages” from the oven.

When cool, cut each “sausage” diagonally into slices. Return and bake them again for 15-20 minutes.

You can serve them with coffee or wine. They will be perfect for culinary present for Christmas. You should cook them; this is the best recipe for biscotti that I found.

Chocolate kisses

Hello! Today is cloudy and cold here and I want to bake some cookies for my family to give them a little peace of nice feeling. My choice was this wonderful chocolate kisses. They are chocolate rich and so soft and melt in the mouth.

Moreover you can make them with white, plain or dark chocolate, whatever you like. I made with white chocolate, because my father love white chocolate, I don’t like it so much, but I can’t eat them so my taste doesn’t matter in this situation.

They are easy to make (I think I said that all the time, but it is easy)

Products:

Adapted from “The Cookie and Biscuit Bible”

150g white chocolate or 75g plain and 75g white

115g butter at room temperature, diced

2 eggs

225g plain flour

Icing sugar, to decorate

Melt the chocolate. Beat together the butter and caster sugar until pale and fluffy. Beat in the eggs a little at a time, beating well after each addition.

Sift the flour over the butter, sugar and egg mixture and mix in lightly and thoroughly.

Add the chocolate. Knead the dough until smooth, wrap in clear plastic wrap and chill for 1 hour.

Preheat the oven to 190 C. Grease 2 baking sheets.

Take rounded teaspoonfuls of the dough and shape them into balls. Arrange the balls on the prepared baking sheets and bake about 12 minutes. Dust with sifted icing sugar.

It will be good to have 2cm between each ball, because they become bigger.

It takes about 1 hour and 30 minutes (20 minutes preparation, 1 hour cooling and 10 minutes baking) and makes about 24 cookies.

This recipe is nice for Christmas and for every time of the year. You should try it. Have a nice day 🙂 See you soon 🙂

Chocolate Chip Muffins

Hi again, I thought to post this recipe tomorrow but I couldn’t wait, because it is so easy and tasty. They are so soft, unbelievable… chocolate in the centre, so amazing… mmm.. Don’t you want to try?

There are so many variants for muffins, but the classic one is the best. You can surprise your family if you cook them for breakfast or coffee time. The smell in the air, the taste in the mouth… mmm.. it will be perfect with nice cup of coffee/ chocolate/ tea. What are you waiting, go and make them 😀

Oooh of course I haven’t given you the recipe yet

Products:

Adapted by “ The Cookie and Biscuit Bible”

115g butter, softened

75g sugar

30g brown sugar

2 eggs

175g plain flour

1tsp baking powder

120ml milk

175g chocolate chips (I used only 100g)

Preheat the oven to 190C. Grease 12-14 muffin tins or use paper liners.

Cream the butter with electric mixer until soft. Add both sugar and beat until light and fluffy. Beat in the eggs, one at a time, and beating well after each addition.

Sift the flour and baking powder, twice. Fold into the butter mixture, alternating with the milk.

Divide half of the mixture among the muffin tins. Sprinkle the chocolate chips on the top, dividing them equally among the muffins, then cover with remaining mixture.

Bate for about 20-25 minutes, until lightly coloured. Leave to stand for 5 minutes before transferring to a wire rank to cool.

I can continue the recipe with- and eat them still they are hot. What is better than homemade muffins? I can talk about them all night, but in that way you will waste your time in reading and you wouldn’t make them and your family will be sad.. you don’t want that, right? : )

Hey, hey.. Good afternoon everyone : ) I haven’t written for a week, so sorry about that, but I didn’t have time to write. However I made cookies almost everyday. Now I will present you my cookies from yesterday. I finished them at 1am so it was impossible to post them 🙂

It is December and for me it means that I think about Christmas all the time, I love this wonderful holiday, it reminds me childhood. Although I am only 16 and this is not that hard, this is the time when everything is magic and there is hope in the air, I love that feeling.

The recipe today is really traditional for Christmas and maybe some of you make it every year. The interesting thing of these cookies is the decoration. I made it by myself but it took me 4 hours for only 20 cookies and it will be great if you have children or friends, who can help and I am sure that you will have a lot of fun.

There are two variants- royal icing or fondant. I used royal icing, because I didn’t have all ingredients for fondant, next time I will use fondant, maybe it will be the faster way for decoration. Never mind how long it took, this is really relexing because you think only about cookies all the time – no problems, no discomfort, nothing. I am not very good at drawing and you can see that, I should learn. My friends, who can draw, will learn me next week, that will be hard (like to learn the tree to dance 😀 )

I write too much.. let’s say something about the recipe:

Products (makes about 70-80cookies):

Adapted by something 

550g plain flour

2 eggs

50g brown sugar

100g caster sugar

150ml cooking oil (opss I forgot to add this 😀 )

150g honey

10g baking soda

Spices – cinnamon, nutmeg, ginger, cloves, a pinch of pepper
pinch of salt

Put sugar (both) and honey in a deep saucepan over low heat and heat up the stove until everything is melted. Add the baking soda and spices, stir for more 30 seconds.

Leave to cool for 15-20 minutes and then stir the eggs and oil. Then add the flour and make dough. Leave it for 15 minutes.

Preheat the oven to 170C

Roll out the dough since it is 2 mm thick. Cut it with the shapes that you want and transfer the cookies in the greased baking sheet. Bake for 7- 10 minutes.

And now is the funny part- decoration : ) You need royal icing/ fondant, food colouring and patience : )

White Chocolate Brownies

Good Morning everyone! I made these brownies yesterday, but I didn’t have time to write. By the way there is no longer brownies 😀  It is one really good recipe, special for white chocolate lovers like my father.

I like it, because there is melted chocolate inside and small pieces which are not melt this make the taste better. If you want to surprise someone, make these white chocolate brownies 🙂 Also it takes only 40 minutes, so you can do main course without rush.

Products:

75g unsalted butter, diced

400g white chocolate, chopped

3 eggs

90g golden caster sugar

10ml vanilla essence

90g sultanas

Coarsely grated rich of 1 lemon, plus 1 tbsp juice

200g plain flour

Preheat the oven to 190C, Grease and line a 28x 20 cm shadow baking tin with baking parchment

Put the butter and 300g of the chocolate in a bowl and melt over a pan of gently simmering water, stirring frequently.

Remove the bowl from the heat and beat in the eggs and sugar, then add the vanilla essence, sultanas, lemon rind and juice, flour and remaining chocolate.

Tip the mixture into the tin and spread into the corners. Bake for about 20 minutes until slightly risen and surface is only just turning golden. The centre should still be slightly soft. Leave to cool in the tin.

Cut the brownies into small squares and then carefully remove them from the tin.

They are chocolate rich and the taste is really great. In moments like that I really don’t want to be on diet, but on the other hand in this way I test my will 😀  That’s all from me for today. See you tomorrow with one really different recipe. Have a nice day! 🙂
