Hey, Happy New Year! Wish you all the best and a lot of sweet moments in this year. Now I will present you most of our Christmas recipes.

However, before I type the recipes I want to tell you more about my Christmas. As you know, I love Christmas and I am like 5- year old child, because I can’t wait to open my presents and every Christmas Eve I go to bed early (before 12 am.) because when I was child my parents told me that if I go to bed after midnight, Santa will not come, so it became a tradition 🙂 At Christmas morning I am always the first person who gets up, because I always get up around 6-7 o’clock. This year everything was the same : ). When I got up I tried to be quiet and I ran to the Christmas tree to find and open my gifts. Like every year Santa brought me the thing that I want 🙂 This year I wanted something that will help me when I want to make some nice decoration and it is really good place to store my things, because before that everything was everywhere 😀
Let’s continue with my story… when I opened my presents my mum got up and it means that she must find and open her presents, which make me happy too, because I love when people open theirs presents. However, Christmas is not only the time when we have lots of gifts, it’s also the time when we gather the whole family and have very good time together. I love these holidays. Yes, I have a lot of work in the kitchen, but I love the time which I spend there 🙂
InBulgariathere are some recipes which are indispensable part of our table, like cookies with honey, baklava (my mum make it every year), cookies with Turkish delight (I haven’t done that) and some other. We make also make some other desserts, they are always different, because we must have choice and things for everyone 🙂
Ok, I will give you some of recipes.
Cookies with honey
Products:
2 eggs
1 ½ cup sugar
1 cup oil
4tbsp honey
10g cinnamon
1tsp soda of bicarbonate
Flour (since it becomes soft dough)
Beat eggs with sugar, then add oil and honey. Mix together some flour (1 cup) with bicarbonate soda and cinnamon. Beat together flour and egg mixture. Then add flour since dough become soft and sticky. It mustn’t be too hard because and cookies will be too hard. Form little balls from the dough and put them to grease with baking sheet tins. Put peace of walnuts on every ball and bake in preheat oven to 180C until it become lightly golden. If you like you can make really small balls and then you can blind two cookies with jam or you can dip each cookie in melt chocolate.
3-chocolate cookies
Products:
225g semisweet chocolate, roughly chopped
80g tablespoons unsalted butter
75g all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
100g brown sugar
1 teaspoon pure vanilla extract
100g white chocolate, chopped
100g milk chocolate, chopped
Preheat the oven to 180C. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring between each, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt.
In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks.
Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on baking sheets 10 minutes; transfer to a wire rack to cool completely.
Brownies cookies
Products:
110g all-purpose flour
pinch of salt
1/3 teaspoon baking powder
75g lightly salted butter, softened
85g sugar
1 egg
1 teaspoon vanilla extract
30g unsweetened cocoa
Preheat oven at 180C. Whisk dry flour, salt and baking powder in bowl and set aside. Mix butter, sugar, eggs, vanilla and cocoa in mixer. Gradually add flour mixture, and mix until smooth. Wrap in plastic and chill for at least one hour.
Roll out cookie dough on floured counter. Cut into desired shapes, brushing extra deposits of flour off the top. Bake on a parchment-lined baking sheet for 8 to 11 minutes until the edges are firm and the centers are slightly soft and puffed. Then put nuts and candies until they are hot. Leave to cool and decorate with white chocolate.

I also make some culinary gifts- Truffles and Homemade Ferrero Rocher. I don’t have photos, sorry about that, but I will give you the recipe.
Chocolate Truffles
Products:
135ml double cream
20ml glucose
100g dark chocolate
100g cocoa
200g dark chocolate
Boil cream and glucose. Chop the chocolate and mix with boiled mixture. Leave to cool, then transfer to refrigerator for 24 hours. Form balls dip; them to the melt chocolate and sift with cocoa powder.
Homemade Ferrero Rocher
Products:
100 g hazelnut wafer biscuits, crushed
150 g toasted hazelnuts, finely chopped
200 g Nutella
150 g dark chocolate
4 1/2 Tbsp oil
Combine wafer biscuits, hazelnuts and Nutella in a bowl. Leave in a fridge for about half an hour and then shape into small balls. Again, leave in the fridge to harden.
Meanwhile, in a double boiler, melt chocolate with oil. Using a toothpick, dip each truffle into melted chocolate and leave on a plate. After you’re done with all the truffles, leave them in the fridge. I coated them only once, so I had a lot of leftover chocolate. Seemed more like the original with the bumpy texture, but if you wish, you can coat them as many times as you like.
Makes about 25 truffles.
And I want to finish with something which is typical for Bulgarian and Turkish cuisine- Baklava.
Products:
800g filo pastry
1kg walnuts
250g butter
1 ½ kg sugar
2l water
Grease the tin with butter. Put 2 length of the filo, brush with melted butter and sprinkle with chopped walnuts and put other 2 length of filo. Do the same since everything finish. Cut the baklava into triangles. Preheat the oven to 150C and bake it for 1h and 30 minutes. In this time you can make the syrup. Put the water and sugar. Leave it to boil for 20 minutes. Then flood the baklava with syrup and leave for one night.
